The Best of…
I’m sure we’ve all got an album at home entitled ‘The Best of…” followed by the name of your favourite band or artist. Mine’s ‘The Best of…Kylie Minogue’ and I am perfectly at peace with myself over that. When it comes to the best of salmon, then you’ve come to the right place.
The thing with salmon is, it’s popular. And it’s getting popularererer. Norway and Chile are just two countries that produce huge quantities of farmed salmon to keep our fish-hungry world fed. Ours, though, comes from the home of the finest farmed product in the world – Scotland. (Incidentally, our smoked salmon is also from Scotland).
It truly is a fantastic product, and that’s reflected in the fact that it’s our most popular fish, wholesale and retail.
Me personally, I enjoy wrapping it in foil with lemon, black pepper and olive oil, and serving with creamy mash and crunchy asparagus.
